Pork Rind Chocolate Chip Cookies

- 4 eggs
- 1/4 cup Swerve sweetener
- 3 Tbs coconut oil
- pinch of salt
- 1 ts baking soda
- 1 ts vanilla extract
- 1 3/4 Pork Panko
- 3 tbs sugar free chocolate chips
Use a hand or stand mixer to beat eggs with a pinch of salt until frothy. Add sweetener and beat on high until the volume doubles (about 5 minutes).
In a separate bowl, combine pork panko with chocolate chips, baking soda and coconut oil.
Combine wet mixture with dry mixture and stir until fully combined. Cover and refrigerate for 30 minutes.
Preheat oven at 350 degrees. Lay parchment paper on baking sheet. Roll cookie dough into 10 to 12 one-inch balls and use the bottom of a glass to flatten the dough.
Bake for 14 - 16 minutes or until golden brown.
