Pork Rind Mocha Brownies

  • Ingredients:

  • 5 eggs
  • 1/3 cup Swerve
  • 1 pinch salt
  • 1 tsp Stevia extract
  • 2 tsp vanilla extract
  • 1 oz espresso
  • 1/3 cup Pork Panko
  • 3 oz unsweetened chocolate (cut into small pieces)
  • 1/3 cup unsweetened cocoa powder
  • 1 cup butter
  • Optional: powdered Swerve for garnish

Step 1

Bring the eggs to room temperature - about 30 minutes.

Step 2

Preheat oven at 325 degrees. Combine eggs, salt and Swerve and beat on low until eggs are foamy. Then turn to high and beat until mixture increase 3x in size (about 5 minutes).

Step 3

In a separate bowl, combine unsweetened chocolate, vanilla, and butter and microwave for 30 seconds. Once melted, use a whisk to mix ingredients until smooth. Let mixture come to room temperature.

Step 4

Fold chocolate mix into egg mix. Then fold in remaining ingredients.

Step 5

Line square baking pan with parchment paper. Pour in brownie mix and bake for 45 - 55 minutes. Optional: Sprinkle powdered Swerve on top.
