Brazi Bites - Ceviche
Ingredients: 12 Garlic Asiago Brazi Bites, 1/2 lb shrimp, 1/2 jalapeno, 1/2 lemon, 1/4 red onion, 1/2 cucumber, 1 1/2 tomatoes, 1 handful of cilantro, 1/2 avocado, 5 fl oz lime juice, 2 tbs worcestershire sauce, hot sauce and salt & pepper to taste
Prep time: 10 minutes (+2 hours for refrigeration) | Cook time: 5 minutes | Yield: 4 servings
Make Brazi Bites based on package instructions.
Combine shrimp and 4 oz of lime juice in a bowl. Cover and refrigerate for at least two hours.
Dice onions, tomatoes, cucumbers and jalapenos. Chop cilantro.
Use your thumb to flatten Brazi Bites. Place onto a baking sheet and bake at 400 degrees for 5 minutes. This will crisp up the bites so you can easily scoop the ceviche.
Remove shrimp from lime juice and in a separate bowl, combine with remaining ingredients.
Serve ceviche with toasted Brazi Bites disks.
